- Peel the red onion and slice it into thin half-moons.
- Pack the sliced red onions tightly into a clean 16-ounce glass jar.
- In a liquid measuring cup, combine the hot water, vinegar, sugar, and salt.
- Stir the liquid vigorously until the salt and sugar are completely dissolved.
- Pour the hot brine over the onions in the jar, ensuring they are completely submerged. Press down gently if needed.
- Let the jar sit uncovered at room temperature for 30 minutes to cool and turn pink.
- Secure the lid and store in the refrigerator. Serve on tacos, avocado toast, or salads.
