Ingredients
  

Teal Layer
  • 0.5 cup pineapple juice chilled
  • 1 tbsp blue curaçao syrup non-alcoholic
  • 1 cup ice
Orange Layer
  • 0.5 cup mango or peach nectar chilled
  • 1 tsp grenadine or strawberry syrup
  • 1 cup ice
Yellow Layer
  • 0.25 cup frozen mango chunks
  • 0.25 cup cream of coconut
  • 0.25 cup pineapple juice chilled
  • 0.5 cup ice
Topping
  • 2 scoops pineapple soft serve or vanilla ice cream

Equipment

  • Blender
  • Tall clear glasses
  • Spoon
  • Straws and drink umbrellas

Method
 

  1. Place two tall, clear glasses in the freezer to chill.
  2. Make the Teal Layer: In a blender, combine 1/2 cup pineapple juice, blue curaçao syrup, and 1 cup of ice. Blend until thick and slushy. Divide evenly into the bottoms of the chilled glasses. Return glasses to freezer.
  3. Rinse the blender. Make the Orange Layer: Combine mango nectar, grenadine, and 1 cup of ice. Blend until thick. Remove glasses from freezer and gently spoon the orange layer over the teal layer. Return to freezer.
  4. Rinse the blender. Make the Yellow Layer: Combine frozen mango, cream of coconut, 1/4 cup pineapple juice, and 1/2 cup ice. Blend until smooth. Gently spoon into the glasses, leaving room at the top.
  5. Immediately top each glass with a generous swirl or scoop of pineapple soft serve or vanilla ice cream.
  6. Garnish with a colorful straw and a paper drink umbrella. Serve immediately.

Notes

To make this an adult cocktail, add 1 oz of rum or vodka to the teal and yellow layers during blending.
