Ingredients
  

Red Velvet Brownie Layer
  • 0.5 cup unsalted butter melted
  • 1 cup granulated sugar
  • 0.25 cup cocoa powder unsweetened
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring gel preferred
  • 1 tsp white vinegar
  • 2 eggs large
  • 0.75 cup all-purpose flour
  • 0.25 tsp salt
Cookie Dough Layer
  • 0.5 cup unsalted butter softened
  • 0.5 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1.25 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 cup chocolate chips semi-sweet
Toppings
  • 1 tsp flaky sea salt Maldon style

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper and spray with non-stick spray.
  2. For Brownie Layer: Whisk melted butter and sugar in a bowl. Add cocoa, vanilla, food coloring, and vinegar. Whisk in eggs. Fold in flour and salt. Set aside.
  3. For Cookie Layer: Cream softened butter and sugars until fluffy. Beat in egg and vanilla. Stir in flour, baking soda, and salt. Fold in chocolate chips.
  4. Drop alternate scoops of brownie batter and cookie dough into the pan in a checkerboard pattern.
  5. Bake for 22-28 minutes until the top is set. A toothpick should come out with moist crumbs.
  6. Sprinkle immediately with flaky sea salt.
  7. Cool completely in the pan before lifting out and slicing.

Notes

Use gel food coloring for the best red color. Do not overbake to keep them fudgy.
