A quick and easy blender salsa that tastes just like the dip from your favorite Mexican restaurant. Uses canned tomatoes and Rotel for perfect consistency and flavor.

Ingredients
  

Salsa Base
  • 1 can (28 oz) whole tomatoes with juice
  • 2 cans (10 oz) Rotel (diced tomatoes and green chilies) undrained
  • 0.25 cup onion chopped
  • 1 clove garlic minced
  • 1 whole jalapeño quartered and sliced thin
  • 0.25 tsp sugar
  • 0.25 tsp salt
  • 0.25 tsp ground cumin
  • 0.5 cup cilantro more to taste
  • 0.5 whole lime juice

Method
 

  1. Prepare your fresh ingredients: chop the onion, mince the garlic, and slice the jalapeño.
  2. Combine whole tomatoes (with juice), Rotel, chopped onion, sliced jalapeño, minced garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor.
  3. Pulse the mixture about 10 to 15 times. Do not blend continuously; you want to achieve a consistency that is blended but still has texture.
  4. Test seasonings with a tortilla chip and adjust salt or cumin as needed.
  5. Refrigerate the salsa for at least one hour to allow flavors to meld.
  6. Serve chilled with tortilla chips or cheese nachos.

Notes

For a spicier salsa, include the jalapeño seeds. For milder, remove them.
