- Toast the sourdough slices in a toaster or pan-fry in a skillet until golden brown and crisp.
- Slice the tomato into rounds. Pat dry with a paper towel if very juicy.
- Spread a thick layer of ricotta cheese onto the warm toast.
- Arrange tomato slices on top of the cheese.
- Sprinkle generously with Everything Bagel seasoning or salt and pepper.
- Garnish with fresh chopped basil.
- Drizzle heavily with extra virgin olive oil and serve immediately.
Notes
For fluffier cheese, whip the ricotta with a fork or mini blender before spreading.
