Ingredients
  

Pizza Base
  • 1 lb pizza dough room temperature
  • 2 tbsp olive oil
  • 1 tbsp cornmeal for dusting
Toppings
  • 0.5 lb Italian sausage bulk, casings removed
  • 1 cup ricotta cheese drained
  • 1.5 cups mozzarella cheese shredded
  • 0.5 cup pizza sauce
  • 3 sprigs fresh thyme
Hot Honey
  • 0.33 cup honey
  • 2 tsp red chili flakes
  • 1 tsp apple cider vinegar
  • 1 tsp hot sauce optional

Equipment

  • Pizza Stone or Baking Sheet
  • Skillet
  • Small Saucepan
  • Pizza Peel

Method
 

  1. Place a pizza stone in the oven and preheat to 500°F (260°C) for at least 30 minutes.
  2. In a small saucepan, warm honey and chili flakes over low heat. Stir in vinegar and hot sauce; set aside to steep.
  3. Brown the Italian sausage in a skillet over medium-high heat until crispy. Drain excess fat.
  4. Stretch the pizza dough on a floured surface to your desired size. Transfer to a cornmeal-dusted peel.
  5. Spread pizza sauce, top with mozzarella, cooked sausage, and dollops of ricotta cheese.
  6. Bake for 10-12 minutes until crust is charred and cheese is bubbling.
  7. Remove from oven, garnish with fresh thyme, and immediately drizzle generously with hot honey.
  8. Slice and serve while hot.

Notes

Ensure ricotta is drained well to prevent a soggy crust.
