Savory Hot Honey Protein Bowl

Ingredients
  

Base Ingredients
  • 1.5 lbs lean ground beef or turkey 90/10 or 93/7
  • 2 large sweet potatoes peeled and cubed
  • 2 tbsp olive oil divided
Seasonings
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp ground cumin
  • 1 pinch salt and pepper to taste
Bowl Toppings
  • 1.5 cups cottage cheese full-fat small curd
  • 2 large avocados halved and sliced
  • 4 tbsp hot honey for drizzling
  • 1 tbsp lime juice for the avocado

Method
 

  1. Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Roast on a lined baking sheet for 20-25 minutes until tender and caramelized.
  2. Heat remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add ground meat, breaking it apart as it cooks.
  3. Season the meat with smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Cook until fully browned and slightly crispy. Remove from heat.
  4. Lay out 4 glass meal prep containers. Divide the roasted sweet potatoes and cooked seasoned ground meat evenly among the bowls.
  5. Add a generous scoop (about 1/3 cup) of cottage cheese to each bowl.
  6. Slice the avocados, drizzle lightly with lime juice to prevent browning, and add half an avocado to each bowl.
  7. Drizzle each bowl with 1 tablespoon of hot honey. Serve immediately or seal and refrigerate for up to 4 days.

Notes

If meal prepping for the week, consider adding the sliced avocado fresh each day to prevent browning. If reheating, remove the avocado and cottage cheese before microwaving the meat and potatoes.
