Ingredients

Biscuit Base
  • 1 can large flaky refrigerated biscuits (8 count) like Grands
Seafood Filling
  • 8 oz cream cheese softened
  • 0.25 cup mayonnaise
  • 1 cup mozzarella cheese shredded
  • 0.5 cup sharp cheddar cheese shredded
  • 1 tsp Old Bay seasoning
  • 0.5 tsp garlic powder
  • 0.25 tsp black pepper
  • 6 oz lump crab meat picked over for shells
  • 6 oz cooked shrimp peeled, deveined, and roughly chopped
Garlic Butter Topping
  • 3 tbsp unsalted butter melted
  • 0.5 tsp dried parsley
  • 0.25 tsp garlic salt

Equipment

  • Baking sheet
  • Parchment paper
  • Mixing bowls
  • Serrated Knife

Method

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Bake the refrigerated biscuits according to package directions (usually 12-15 minutes). Let cool slightly.
  3. In a bowl, mix softened cream cheese, mayonnaise, mozzarella, cheddar, Old Bay, garlic powder, and black pepper until smooth.
  4. Gently fold the crab meat and chopped cooked shrimp into the cheese mixture.
  5. Using a serrated knife, carefully split each baked biscuit in half horizontally.
  6. Spoon the seafood cheese mixture generously onto the bottom half of each biscuit, then replace the top half.
  7. Mix melted butter with dried parsley and garlic salt. Brush generously over the tops of the stuffed biscuits.
  8. Return to the oven and bake for 5-7 minutes until the filling is hot, bubbly, and the cheese is melted. Garnish with fresh parsley and serve warm.

Notes

Do not overmix the crab meat, keep it lumpy for the best texture. Freshly grated cheese melts much better than pre-shredded bagged cheese.
