S'mores Grilled Cheese

Ingredients
  

Sandwich Components
  • 4 slices bread white, brioche, or sourdough
  • 2 tbsp salted butter softened to room temperature
  • 1 cup chocolate chocolate bars broken into pieces, or chocolate chips
  • 1 cup marshmallows mini marshmallows, or large ones cut in half
  • 2 tbsp graham cracker crumbs optional, for crunch

Equipment

  • Non-stick skillet or cast iron pan
  • Spatula
  • Butter knife

Method
 

  1. Butter one side of each slice of bread completely to the edges using the softened salted butter.
  2. Place two slices of bread, butter side down, on a clean surface. Layer the unbuttered side with chocolate pieces and marshmallows. Sprinkle with graham cracker crumbs if using.
  3. Top with the remaining two slices of bread, butter side facing out.
  4. Heat a skillet over medium-low heat. Place the sandwiches in the pan and cook for 3-4 minutes until the bottom is golden brown.
  5. Carefully flip the sandwiches using a spatula and cook the other side for another 3-4 minutes. (Cover with a lid for the last minute if the marshmallows need help melting).
  6. Remove from heat, let rest for 1 minute so the filling sets slightly, cut in half, and serve immediately.

Notes

Low and slow heat is crucial to melt the chocolate and marshmallows without burning the buttered bread. For an extra sweet crust, sprinkle a tiny pinch of sugar over the butter before grilling.
