Ingredients

Candy Base
  • 2 cups granulated sugar
  • 0.66 cup light corn syrup
  • 0.75 cup water filtered
  • 1 tsp hard candy flavoring oil flavor of choice
  • 1 dash gel food coloring colors of choice
  • 0.5 cup coarse sanding sugar for sparkle texture
  • 2 tbsp edible glitter for rhinestone effect
  • 1 spray cooking spray for greasing molds

Equipment

  • Heavy-bottomed saucepan
  • Candy Thermometer
  • Silicone duck molds
  • Silicone spatula

Method

  1. Lightly grease silicone duck molds with cooking spray and wipe away excess. Set aside on a heat-proof surface.
  2. In a heavy-bottomed saucepan, combine sugar, corn syrup, and water. Stir gently until sugar is moistened.
  3. Attach a candy thermometer to the side of the pot, ensuring it does not touch the very bottom.
  4. Bring the mixture to a boil over medium-high heat. Do not stir once boiling begins.
  5. Boil until the thermometer reaches exactly 300°F (149°C), the hard crack stage.
  6. Immediately remove from heat. Once bubbling stops, carefully stir in flavoring oil and food coloring.
  7. Quickly pour the hot syrup into the prepared silicone molds. Allow to cool completely at room temperature for 45-60 minutes.
  8. Pop the hard candy ducks out of the molds. Lightly brush with water and dip into a mix of sanding sugar and edible glitter to create a bedazzled look. Let dry.

Notes

Always use caution when working with boiling sugar as it can cause severe burns. Keep away from young children during the cooking process.
