Ingredients
  

Filling
  • 8 oz cream cheese softened
  • 1 cup cheddar cheese shredded
  • 4-5 slices bacon cooked and crumbled
  • 3-4 jalapeños seeded and diced
  • 2 green onions chopped
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
Assembly
  • 12 egg roll wrappers
  • 1 small bowl of water for sealing
  • 2 cups vegetable oil for frying

  • Mixing bowls
  • Wire rack
  • Slotted spoon

Method
 

  1. In a large bowl, mix cream cheese, shredded cheddar, diced jalapeños, crumbled bacon, green onions, garlic powder, and onion powder until well combined.
  2. Lay an egg roll wrapper flat with a corner pointing toward you. Place about 2 tablespoons of filling in the center.
  3. Fold the bottom corner up over the filling, fold in the sides, and roll tightly. Seal the top corner with a little water.
  4. Repeat with remaining filling and wrappers.
  5. Heat oil in a deep pan or fryer to 350°F (175°C).
  6. Fry egg rolls in batches for 3-4 minutes until golden brown and crispy.
  7. Remove from oil and drain on a wire rack or paper towels.
  8. Serve warm with ranch or sweet chili dipping sauce.

Notes

Be careful not to overfill the wrappers to prevent leaking. Serve immediately for best texture.
