Spicy Roasted Garlic Chickpeas

Crispy, oven-roasted chickpeas drenched in a spicy garlic-infused oil and tossed with fresh parsley and red chilies.

Ingredients
  

Chickpea Base
  • 30 oz canned chickpeas rinsed and dried
  • 3 tbsp extra virgin olive oil divided
  • 1 tsp sea salt
Spicy Garlic Coating
  • 4 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper
  • 0.5 tsp red chili flakes
  • 0.5 tsp cumin
Finishing
  • 2 tbsp fresh parsley chopped
  • 1 small red chili diced

Equipment

  • Mixing bowls

Method
 

  1. Preheat oven to 400°F (200°C) and thoroughly dry the rinsed chickpeas with paper towels.
  2. Toss chickpeas with 1 tbsp olive oil and a pinch of salt on a baking sheet.
  3. Roast for 20-25 minutes until they start to crisp.
  4. Whisk remaining olive oil, garlic, and spices in a small bowl.
  5. Remove chickpeas from oven, pour the spice oil over them, and toss to coat every bean.
  6. Roast for another 10-15 minutes until golden brown and very crunchy.
  7. Remove from oven and immediately toss with fresh parsley and diced chilies.
  8. Serve warm and enjoy the glistening, spicy crunch!

Notes

Ensure chickpeas are bone-dry before roasting for maximum crunch. Do not crowd the pan.
