Ingredients

Filling
  • 0.5 cup frozen chopped spinach thawed and squeezed dry
  • 0.5 cup parmesan cheese grated
  • 8 oz cream cheese softened
  • 1.5 cups mozzarella cheese shredded
  • 1 clove garlic minced (optional)
Breading & Frying
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 2 cups Italian breadcrumbs or Panko
  • 2 cups vegetable oil for frying

Equipment

  • Mixing bowls
  • Baking sheet
  • Deep pot or fryer
  • Wire rack

Method

  1. In a medium bowl, mix together the softened cream cheese, mozzarella, parmesan, and dried spinach until fully combined.
  2. Scoop about 2 tablespoons of the mixture and shape into a log/stick. Place on a parchment-lined baking sheet.
  3. Freeze the sticks for at least 2 hours until solid.
  4. Set up a breading station: one bowl with flour, one with beaten eggs, one with breadcrumbs.
  5. Dip frozen sticks into flour, then egg, then breadcrumbs. Dip back into egg and breadcrumbs a second time for a double coating.
  6. Heat oil in a deep pot to 350°F (175°C).
  7. Fry sticks in batches for 2-3 minutes until golden brown. Drain on a wire rack and serve hot.

Notes

Ensure spinach is squeezed very dry to prevent sticks from becoming watery.
