Method
- In a medium bowl, mix together the softened cream cheese, mozzarella, parmesan, and dried spinach until fully combined.
- Scoop about 2 tablespoons of the mixture and shape into a log/stick. Place on a parchment-lined baking sheet.
- Freeze the sticks for at least 2 hours until solid.
- Set up a breading station: one bowl with flour, one with beaten eggs, one with breadcrumbs.
- Dip frozen sticks into flour, then egg, then breadcrumbs. Dip back into egg and breadcrumbs a second time for a double coating.
- Heat oil in a deep pot to 350°F (175°C).
- Fry sticks in batches for 2-3 minutes until golden brown. Drain on a wire rack and serve hot.
Notes
Ensure spinach is squeezed very dry to prevent sticks from becoming watery.
