Method
- Prepare and bake the brownie mix according to package directions in a 9x13 inch pan. Allow to cool completely (this is critical for clean cuts).
- Remove cooled brownies from the pan and cut into approximately 1-inch squares. You will need about 24 squares.
- Wash strawberries and pat them thoroughly dry with paper towels. Remove the stems (hull them) to create a flat surface.
- Thread the ingredients onto the wooden skewers in an alternating pattern: Strawberry, Brownie, Marshmallow. Repeat until the skewer is full.
- In a small microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until completely smooth and glossy.
- Lay the kabobs on a serving platter or parchment paper. Drizzle the melted chocolate generously over the skewers.
- Serve immediately or let the chocolate set slightly before serving.
Notes
Tip: Briefly freeze the brownies before cutting to get perfect, sharp edges.
