Method
- Place serving glasses in the freezer to chill while you prepare the ingredients.
- In a blender, combine frozen strawberries, white rum, 1 tbsp lime juice, simple syrup, and 1/2 cup ice.
- Blend on high until smooth and slushy. Pour into a temporary container and set aside (or keep in freezer). Rinse blender.
- In the clean blender, combine cream of coconut, coconut rum, 1/2 tbsp lime juice, and 1.5 cups ice.
- Blend until creamy, white, and frosty.
- Retrieve glasses. Pour alternating layers of the red strawberry mix and white coconut mix to create a swirl effect.
- Garnish with a fresh strawberry on the rim and a sprinkle of shredded coconut on top. Serve immediately.
Notes
For a mocktail version, substitute rum with water or coconut water.
