Strawberry Coconut Daiquiri

Ingredients
  

Strawberry Layer
  • 2 cups frozen strawberries
  • 2 oz white rum
  • 1 tbsp fresh lime juice
  • 1 oz simple syrup adjust to taste
  • 0.5 cup ice
Coconut Layer
  • 2 oz cream of coconut like Coco Lopez
  • 2 oz coconut rum or white rum
  • 0.5 tbsp fresh lime juice
  • 1.5 cups ice
Garnish
  • 2 fresh strawberries
  • 1 tbsp shredded coconut sweetened or unsweetened

Equipment

  • Blender
  • Measuring cups
  • Citrus Juicer
  • Short tumbler glasses

Method
 

  1. Place serving glasses in the freezer to chill while you prepare the ingredients.
  2. In a blender, combine frozen strawberries, white rum, 1 tbsp lime juice, simple syrup, and 1/2 cup ice.
  3. Blend on high until smooth and slushy. Pour into a temporary container and set aside (or keep in freezer). Rinse blender.
  4. In the clean blender, combine cream of coconut, coconut rum, 1/2 tbsp lime juice, and 1.5 cups ice.
  5. Blend until creamy, white, and frosty.
  6. Retrieve glasses. Pour alternating layers of the red strawberry mix and white coconut mix to create a swirl effect.
  7. Garnish with a fresh strawberry on the rim and a sprinkle of shredded coconut on top. Serve immediately.

Notes

For a mocktail version, substitute rum with water or coconut water.
