Ingredients
  

Taco Body
  • 4 large waffle cones softened and folded into taco shapes
  • 1 cup semi-sweet chocolate chips melted
  • 1 quart strawberry ice cream premium, dense
Dinosaur Details
  • 0.5 cup heavy whipping cream whipped to stiff peaks
  • 4 small fresh strawberries whole, for heads
  • 4 large fresh strawberries cut into tiny triangles for spikes
  • 1 pinch black sesame seeds or black decorating gel, for eyes

Equipment

  • Taco holder or foil
  • Small melon baller
  • Piping bag
  • Microwave-safe bowl

Method
 

  1. Fold softened waffle bowls into taco shapes and let them crisp up.
  2. Dip the top edges of the taco shells into melted chocolate and freeze until set.
  3. Fill the shells tightly with strawberry ice cream, smooth the top, and freeze until completely solid.
  4. Use a melon baller to scoop 16 tiny balls of strawberry ice cream. Freeze them on a tray.
  5. Press a whole small strawberry into the front of the frozen ice cream filling to make the head.
  6. Pipe stiff whipped cream along the top rim and press triangular strawberry slices into the cream to create Stegosaurus spikes.
  7. Attach four frozen mini ice cream scoops to the bottom of the shell to act as legs.
  8. Add black sesame seeds or gel to the strawberry head for eyes.
  9. Return the assembled dinosaurs to the freezer for at least 1 hour before serving to set completely.

Notes

Work quickly and in stages! Always return the dessert to the freezer if the ice cream begins to melt during assembly.
