Ingredients
  

Crust
  • 24 Oreo cookies crushed
  • 5 tbsp unsalted butter melted
Cheesecake Layer
  • 16 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 0.5 cup sour cream full fat
  • 1 tsp vanilla extract
  • 2 eggs large, room temperature
  • 0.5 cup fresh strawberries finely chopped
Toppings
  • 0.5 cup strawberry jam for swirling
  • 4 Oreos crushed for garnish

Equipment

  • 8x8 inch baking pan
  • Food Processor
  • Hand mixer or stand mixer
  • Parchment paper

Method
 

  1. Preheat oven to 325°F and line an 8x8 pan with parchment paper.
  2. Mix crushed Oreos and melted butter; press into the pan and bake for 10 minutes.
  3. Beat softened cream cheese and sugar until smooth; add sour cream and vanilla.
  4. Incorporate eggs one at a time on low speed until just combined.
  5. Fold in chopped strawberries and pour batter over the cooled crust.
  6. Swirl strawberry jam into the top of the batter using a toothpick.
  7. Bake for 35-40 minutes until edges are set. Cool completely.
  8. Refrigerate for at least 4 hours before topping with extra Oreos and slicing.
