Ingredients
  

Strawberry Layer
  • 2 cups frozen strawberries
  • 2 oz white rum
  • 1 oz lime juice freshly squeezed
  • 1 tbsp sugar or simple syrup
  • 0.5 cup ice
Piña Colada Layer
  • 2 cups frozen pineapple chunks
  • 2 oz white rum or coconut rum
  • 0.5 cup cream of coconut like Coco Lopez
  • 0.5 cup pineapple juice
  • 0.5 cup ice
Garnish
  • 2 fresh strawberries
  • 2 wedges fresh pineapple

Equipment

  • Highball glasses

Method
 

  1. In a blender, combine frozen strawberries, 2 oz rum, lime juice, sugar, and 1/2 cup ice. Blend until smooth and thick.
  2. Pour the strawberry mixture into a pitcher or separate container and set aside (keep frozen if needed).
  3. Rinse blender. Add frozen pineapple, 2 oz rum, cream of coconut, pineapple juice, and remaining ice. Blend until creamy.
  4. Pour the strawberry mixture into glasses, filling about halfway.
  5. Top with the pineapple mixture. Use a spoon to gently swirl the layers together for a marbled effect.
  6. Garnish with a fresh strawberry and pineapple wedge on the rim. Serve immediately with a straw.

Notes

For a non-alcoholic version (mocktail), simply omit the rum and add a splash of water or extra juice to help the blender.
