Strawberry Piña Colada (Lava Flow)

Ingredients
  

Strawberry Layer
  • 1 cup strawberries frozen or fresh
  • 1 oz white rum
  • 1 tsp sugar optional
Coconut Layer
  • 1.5 cups frozen pineapple chunks
  • 2 oz pineapple juice
  • 2 oz cream of coconut like Coco Lopez
  • 2 oz white rum
  • 1 cup ice
Garnish
  • 2 wedges fresh pineapple
  • 2 whole strawberries

Equipment

  • Blender
  • Highball or Hurricane Glasses
  • Jigger or Measuring Cup

Method
 

  1. Combine strawberries, 1 oz rum, and sugar in a blender. Blend until smooth. Pour into a pitcher or separate glass and rinse the blender.
  2. In the clean blender, combine frozen pineapple, pineapple juice, cream of coconut, remaining 2 oz rum, and ice.
  3. Blend on high until thick and creamy. If too thin, add more ice.
  4. Pour the strawberry mixture into the bottom of the serving glasses (or pour it down the sides after filling with white layer for a swirl effect).
  5. Top with the white coconut mixture to create the 'lava flow' look.
  6. Garnish with a pineapple wedge and a strawberry on the rim. Serve immediately with a straw.

Notes

For a non-alcoholic version, simply replace the rum with pineapple juice or water.
