Method
- Combine strawberries, 1 oz rum, and sugar in a blender. Blend until smooth. Pour into a pitcher or separate glass and rinse the blender.
- In the clean blender, combine frozen pineapple, pineapple juice, cream of coconut, remaining 2 oz rum, and ice.
- Blend on high until thick and creamy. If too thin, add more ice.
- Pour the strawberry mixture into the bottom of the serving glasses (or pour it down the sides after filling with white layer for a swirl effect).
- Top with the white coconut mixture to create the 'lava flow' look.
- Garnish with a pineapple wedge and a strawberry on the rim. Serve immediately with a straw.
Notes
For a non-alcoholic version, simply replace the rum with pineapple juice or water.
