Strawberry Piña Colada Smoothie

A gorgeous, layered tropical smoothie combining the creamy flavors of a pineapple-coconut piña colada with vibrant, sweet strawberry puree. A frosty summer delight!

Ingredients
  

Smoothie Ingredients
  • 1.5 cups frozen pineapple chunks
  • 1 cup frozen strawberries
  • 0.75 cup coconut milk canned or carton, add more if needed
  • 0.5 frozen banana cut into chunks
  • 1-2 tbsp honey or agave nectar optional, to taste
Garnish
  • 1 wedge fresh pineapple
  • 2 fresh strawberries halved

Equipment

  • High-speed blender
  • Tall serving glass or cup
  • Long spoon or chopstick

Method
 

  1. In a blender, combine frozen pineapple, frozen banana, coconut milk, and sweetener (if using). Blend until thick, creamy, and smooth.
  2. Pour slightly more than half of the yellow pineapple mixture into a separate glass and set aside.
  3. Add the frozen strawberries to the remaining mixture in the blender. Blend until smooth and vibrant pink.
  4. In a tall glass, alternate pouring dollops of the pink strawberry mixture and the yellow pineapple mixture to create layers.
  5. Use a long spoon or straw to gently drag through the layers against the side of the glass to create a swirled effect.
  6. Garnish the rim with a fresh pineapple wedge and sliced strawberries. Serve immediately.

Notes

For a thicker, more dessert-like texture, use full-fat canned coconut milk. For an adult version, add 1-2 ounces of white rum before blending.
