- In a blender, combine frozen pineapple, frozen banana, coconut milk, and sweetener (if using). Blend until thick, creamy, and smooth.
- Pour slightly more than half of the yellow pineapple mixture into a separate glass and set aside.
- Add the frozen strawberries to the remaining mixture in the blender. Blend until smooth and vibrant pink.
- In a tall glass, alternate pouring dollops of the pink strawberry mixture and the yellow pineapple mixture to create layers.
- Use a long spoon or straw to gently drag through the layers against the side of the glass to create a swirled effect.
- Garnish the rim with a fresh pineapple wedge and sliced strawberries. Serve immediately.
Notes
For a thicker, more dessert-like texture, use full-fat canned coconut milk. For an adult version, add 1-2 ounces of white rum before blending.
