Ingredients

Cluster Filling
  • 1 cup fresh strawberries finely chopped
  • 1 cup yogurt Greek, Skyr, or thick regular yogurt
Chocolate Shell
  • 1 cup dark chocolate chips or chopped chocolate
  • 1 tsp coconut oil optional, for thinning chocolate

Equipment

  • Mixing bowl
  • Baking sheet
  • Parchment paper
  • Microwave-safe bowl or double boiler

Method

  1. Wash, hull, and finely chop the fresh strawberries. Ensure they are dry.
  2. In a bowl, gently mix the chopped strawberries into the yogurt until evenly distributed.
  3. Line a baking sheet with parchment paper. Plop small spoonfuls of the yogurt mixture onto the tray, keeping them separated.
  4. Place the tray in the freezer for 1.5 to 2 hours, or until the clusters are frozen completely solid.
  5. Melt the dark chocolate chips and coconut oil in the microwave in 30-second bursts, stirring until smooth and glossy.
  6. Using a fork, quickly dip each frozen yogurt cluster into the melted chocolate to coat entirely. Let excess drip off and return to the parchment paper.
  7. Freeze for an additional 10 minutes until the chocolate shell is completely set. Serve or store in a freezer-safe container.

Notes

Let the frozen clusters sit at room temperature for 3-5 minutes before eating for the best creamy texture.
