Sweet & Sticky Bacon Wrapped Meatballs

Ingredients
  

Meatballs
  • 1 lb ground beef lean
  • 0.5 cup breadcrumbs
  • 1 egg large
  • 1 small onion minced
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Assembly
  • 12 slices bacon cut in half
  • 1 cup BBQ sauce
  • 2 tbsp parsley chopped, for garnish

Equipment

  • Wire rack
  • Mixing bowl
  • Pastry brush

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, breadcrumbs, egg, onion, garlic, and spices until combined.
  3. Form meat mixture into small oval logs (approx 1.5 tbsp each).
  4. Wrap each meatball log with a half-slice of bacon.
  5. Place seam-side down on the baking sheet. Bake for 15-18 minutes.
  6. Remove from oven, brush generously with BBQ sauce.
  7. Broil for 2-4 minutes until the sauce is bubbly and sticky.
  8. Garnish with parsley and serve warm with dipping sauce.

Notes

Use standard bacon, not thick-cut, to ensure it crisps up at the same rate the meat cooks.
