Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a small bowl, mix breadcrumbs and milk; let sit for 5 minutes to form a paste.
- Sauté diced onions in a skillet until soft (5 mins), add garlic for 1 min, then let cool.
- In a large bowl, combine beef, onion mixture, breadcrumb paste, eggs, Worcestershire sauce, and spices. Mix gently by hand.
- Form mixture into a loaf shape on the baking sheet. Bake for 45-55 minutes (internal temp 160°F).
- While baking, sauté sliced mushrooms in butter until browned. Fry bacon until crispy and crumble.
- Remove meatloaf from oven. Top with Swiss cheese slices, sautéed mushrooms, and bacon bits.
- Return to oven for 3-5 minutes until cheese is melted and bubbly. Rest 10 minutes before slicing.

Ensure you do not overmix the meat to keep it tender.
