Ingredients
  

Filling
  • 1 lb ground beef lean
  • 1 packet taco seasoning 1 oz
  • 1 packet ranch seasoning mix dry powder, 1 oz
  • 0.5 cup water
Assembly
  • 1 bag Tostitos Scoops tortilla chips
  • 2 cups shredded cheddar cheese or Mexican blend
Toppings
  • 2 Roma tomatoes diced
  • 0.25 cup cilantro chopped
  • 1 cup sour cream optional

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Brown the ground beef in a skillet over medium-high heat until cooked through; drain excess grease.
  3. Stir in the taco seasoning, dry ranch mix, and water. Simmer for 2-3 minutes until thickened.
  4. Arrange tortilla scoops on the baking sheet and fill each with a spoonful of the meat mixture.
  5. Top each scoop generously with shredded cheese.
  6. Bake for 7-10 minutes until the cheese is melted and bubbly.
  7. Remove from oven and top with diced tomatoes and cilantro before serving.

Notes

Serve immediately to ensure chips stay crispy. You can substitute chicken or turkey for the beef.
