- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Brown the ground beef in a skillet over medium-high heat until cooked through; drain excess grease.
- Stir in the taco seasoning, dry ranch mix, and water. Simmer for 2-3 minutes until thickened.
- Arrange tortilla scoops on the baking sheet and fill each with a spoonful of the meat mixture.
- Top each scoop generously with shredded cheese.
- Bake for 7-10 minutes until the cheese is melted and bubbly.
- Remove from oven and top with diced tomatoes and cilantro before serving.
Notes
Serve immediately to ensure chips stay crispy. You can substitute chicken or turkey for the beef.
