Ingredients
  

Chicken
  • 1 lb chicken breasts boneless, skinless
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Glaze
  • 0.25 cup honey
  • 2 tbsp soy sauce low sodium preferred
  • 1 tbsp lime juice freshly squeezed
  • 2 cloves garlic minced
Toppings
  • 1 avocado sliced
  • 2 tbsp red onion finely chopped
  • 2 tbsp cilantro chopped

Method
 

  1. Season chicken breasts on both sides with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes per side until golden and cooked through. Remove to a plate.
  3. Reduce heat to medium. Add minced garlic to the pan and sauté for 30 seconds.
  4. Whisk in honey, soy sauce, and lime juice. Simmer for 2-3 minutes until the sauce thickens slightly.
  5. Return chicken to the pan and toss to coat in the glaze.
  6. Serve chicken over rice, spooning extra sauce over the top. Garnish with sliced avocado, red onion, and cilantro.

Notes

Serve with steamed rice or cauliflower rice for a complete meal.
