Ingredients
  

Cupcake Base
  • 1 box vanilla cake mix 15.25 oz, plus ingredients required on box
  • 24 blue cupcake liners
Frosting and Sand
  • 2 cups vanilla buttercream frosting homemade or store-bought
  • 1 sleeve honey graham crackers crushed into fine crumbs
Decorations
  • 1 package rainbow sour candy belts cut into small rectangles
  • 24 Teddy Grahams honey or cinnamon
  • 24 red gummy ring candies like Life Savers
  • 24 miniature paper cocktail umbrellas

Equipment

  • Muffin Tin
  • Mixing bowls
  • Zip-top plastic bag
  • Rolling Pin

Method
 

  1. Preheat oven and prepare cake batter according to the box directions. Line a muffin tin with blue cupcake liners.
  2. Fill liners 2/3 full and bake according to package directions. Let cool completely on a wire rack.
  3. Place graham crackers in a zip-top bag and crush with a rolling pin until they resemble fine sand. Pour into a shallow bowl.
  4. Frost the cooled cupcakes with an even layer of vanilla frosting.
  5. Immediately dip the frosted top of each cupcake into the crushed graham crackers, rolling the edges to cover completely.
  6. Cut the rainbow candy belts into small towel shapes. Place one on each cupcake.
  7. Place a Teddy Graham on top of the candy towel, and set a red gummy ring next to it.
  8. Insert a cocktail umbrella into the cupcake at an angle behind the bear to provide shade. Serve and enjoy!

Notes

Assemble the candies and umbrellas right before serving to prevent the cookies from getting soft.
