Tipsy Mermaid Cocktail

Ingredients
  

Cocktail Base
  • 2 oz pineapple juice chilled
  • 1 oz white rum or coconut rum
  • 1 oz Midori melon liqueur
  • 0.5 oz Blue Curacao
  • 1 cup crushed ice or pebble ice
Garnish
  • 1 slice pineapple optional
  • 1 maraschino cherry optional

Equipment

  • Highball or Hurricane Glass
  • Bar Spoon
  • Jigger

Method
 

  1. Fill a tall glass generously with crushed ice or pebble ice.
  2. Pour the Midori melon liqueur and White Rum over the ice.
  3. Add the Pineapple Juice. The drink will look green/yellow at this stage.
  4. Slowly pour the Blue Curacao down the side of the glass or over the back of a spoon. It will sink to the bottom creating a blue-to-green ombre effect.
  5. Garnish with a pineapple wedge or cherry if desired.
  6. Serve immediately with a straw for stirring.

Notes

For a 'frozen' version, blend all ingredients with ice until smooth.
