Ingredients

  • 1 large banana ripe but firm
  • 2 whole kiwis peeled
  • 1-2 whole mandarin oranges peeled and segmented

Method
 

  1. Peel the banana and slice it in half vertically (lengthwise). Place the flat sides down and cut horizontally into 1/2-inch segments, keeping the shape intact.
  2. Peel the kiwis and slice them in half vertically. Lay the flat sides down and cut them into half-moon wedges for the palm leaves.
  3. Peel the mandarin oranges and carefully separate the individual segments, removing any excess white pith.
  4. On a white plate, arrange the banana halves side-by-side, curving slightly outward to resemble palm tree trunks.
  5. Fan the kiwi wedges at the top of each banana trunk to create the leafy palm fronds.
  6. Cluster the mandarin orange segments at the bottom of the plate beneath the trunks to look like a sandy beach.
  7. Serve immediately and enjoy your edible tropical art!

Notes

To prevent bananas from browning if serving later, brush lightly with lemon or pineapple juice. Add blueberries or chocolate chips under the kiwi leaves for 'coconuts'.
