Ultimate Bacon Egg Avocado Toast

Ingredients
  

Toast Base
  • 2 slices seeded sourdough bread thick cut
  • 1 tbsp butter for toasting
Avocado Mash
  • 1 large ripe avocado
  • 1 tsp lemon juice freshly squeezed
  • 1 pinch sea salt
  • 1 pinch black pepper freshly cracked
Toppings
  • 4 strips bacon thick cut
  • 2 large eggs
  • 1 tbsp fresh chives finely chopped

  • Frying pan or skillet
  • Toaster or griddle
  • Mixing bowl

Method
 

  1. Place bacon strips in a cold skillet and turn heat to medium. Cook until crispy and fat has rendered (approx 8-10 mins). Remove bacon and drain on paper towels.
  2. While bacon cooks, cut avocado in half, remove pit, and scoop flesh into a bowl. Mash roughly with a fork, mixing in lemon juice, salt, and pepper.
  3. Butter the bread slices and toast them in a hot pan or toaster until golden brown and crispy.
  4. In the same skillet used for bacon (remove excess grease if necessary), crack the eggs. Fry until whites are set but yolks are still runny.
  5. Assemble by spreading avocado mash generously over the toast.
  6. Top avocado with the fried egg and crispy bacon strips.
  7. Garnish with chopped chives and extra cracked black pepper before serving.

Notes

For a spicy kick, add red pepper flakes to the avocado mash.
