Ingredients

Brownie Base
  • 0.5 cup unsalted butter plus more for greasing
  • 8 oz semi-sweet or dark chocolate chopped
  • 1 cup granulated sugar
  • 0.25 cup light brown sugar packed
  • 3 large eggs room temperature
  • 1 tsp vanilla extract
  • 0.5 cup all-purpose flour plus 2 tablespoons
  • 0.25 cup cocoa powder Dutch-process
  • 0.5 tsp kosher salt
  • 0.75 cup walnuts or pecans chopped
Sundae Assembly
  • 9 scoops vanilla bean ice cream
  • 0.5 cup chocolate syrup for drizzling
  • 0.25 cup semi-sweet chocolate chips for garnish

Equipment

  • 8x8 inch baking pan
  • Mixing bowls
  • Double boiler or microwave
  • Whisk

Method

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment paper and grease lightly.
  2. Melt chopped chocolate and butter in a double boiler until smooth. Let cool slightly.
  3. In a large bowl, vigorously whisk together eggs, granulated sugar, and brown sugar until pale and voluminous.
  4. Fold the melted chocolate mixture and vanilla extract into the egg mixture until just combined.
  5. Sift flour, cocoa powder, and salt over the batter. Fold gently until just a few streaks of flour remain.
  6. Fold in the chopped walnuts evenly.
  7. Pour batter into the pan. Bake 25-30 minutes until a toothpick comes out with moist crumbs. Cool before slicing.
  8. To serve, place a warm brownie square on a plate, top with a scoop of vanilla ice cream, drizzle heavily with chocolate syrup, and sprinkle with chocolate chips.

Notes

For the cleanest slices, ensure the brownies are completely cool before cutting. Warm individual slices in the microwave for 10-15 seconds before assembling the sundae.
