- Prepare the fruit: cube the watermelon, hull and slice the strawberries, and pit and halve the cherries. Place them in a large serving bowl.
- In a small jar or bowl, whisk together the fresh lime juice, honey (or maple syrup), chopped mint, and lime zest until well combined.
- Pour the dressing over the watermelon, strawberries, and cherries. Gently toss to coat the sturdy fruits.
- Add the fresh raspberries to the bowl and very gently fold them in to prevent them from breaking apart.
- Chill in the refrigerator for 15-30 minutes to let the flavors meld. Garnish with whole mint leaves before serving.
Notes
For the best texture, chill all the fruit before cutting and assembly. Leftovers can be stored for up to 2 days, though the fruit will become softer.
