Ingredients
  

Salad Ingredients
  • 4 cups seedless watermelon cut into bite-sized cubes
  • 2 cups fresh strawberries hulled and halved
  • 1.5 cups fresh sweet cherries pitted and halved
  • 1 cup fresh raspberries
Lime Mint Dressing
  • 2 tbsp fresh lime juice about 1 to 2 limes
  • 1 tbsp honey or maple syrup adjust to taste
  • 0.25 cup fresh mint leaves finely chopped, plus extra for garnish
  • 1 tsp lime zest optional

  • Small mixing bowl or jar
  • Sharp knife
  • Cherry pitter (optional)

Method
 

  1. Prepare the fruit: cube the watermelon, hull and slice the strawberries, and pit and halve the cherries. Place them in a large serving bowl.
  2. In a small jar or bowl, whisk together the fresh lime juice, honey (or maple syrup), chopped mint, and lime zest until well combined.
  3. Pour the dressing over the watermelon, strawberries, and cherries. Gently toss to coat the sturdy fruits.
  4. Add the fresh raspberries to the bowl and very gently fold them in to prevent them from breaking apart.
  5. Chill in the refrigerator for 15-30 minutes to let the flavors meld. Garnish with whole mint leaves before serving.

Notes

For the best texture, chill all the fruit before cutting and assembly. Leftovers can be stored for up to 2 days, though the fruit will become softer.
