Ingredients

Whipped Topping
  • 1 cup heavy whipping cream very cold
  • 3 tbsp powdered pink lemonade drink mix sweetened
Drink Base
  • 2 cups water or prepared liquid lemonade cold
  • 1 cup ice cubes
  • 2 slices fresh lemon for garnish (optional)

Equipment

  • Electric hand mixer or stand mixer
  • Mixing bowl
  • Measuring Cups and Spoons
  • Serving glasses

Method

  1. Place your mixing bowl and the beaters of your electric mixer in the freezer for 10 minutes to chill.
  2. Pour the cold heavy whipping cream into the chilled bowl and sprinkle the pink lemonade powder evenly over the top.
  3. Using the electric mixer, beat on low speed initially to combine, then increase to medium-high.
  4. Whip for 2-3 minutes until stiff peaks form. The mixture should hold its shape firmly when the beaters are lifted.
  5. Fill two serving glasses about 2/3 full with ice cubes and pour cold water (or liquid lemonade) over the ice.
  6. Spoon or pipe the whipped pink lemonade generously over the iced liquid.
  7. Garnish the rim of each glass with a fresh lemon slice and serve immediately with a straw.

Notes

Ensure your heavy cream is extremely cold to get the best and fastest whip. Do not over-mix or it will turn to butter.
