- Heat olive oil in a skillet over medium heat. Add chopped spinach and garlic. Sauté for 2-3 minutes until wilted. Remove from heat and let cool completely.
- In a large bowl, combine ground chicken, cooled spinach mixture, cubed white cheddar, onion powder, salt, and pepper.
- Gently mix with hands until just combined. Do not overmix to avoid toughness.
- Form mixture into 4 equal patties. Make a slight indentation in the center of each patty with your thumb.
- Heat a skillet or grill to medium-high heat. Lightly oil the surface.
- Cook burgers for 5-6 minutes per side, or until internal temperature reaches 165°F (74°C) and cheese is melted.
- Toast the brioche buns lightly while burgers rest.
- Assemble burgers on buns with desired toppings and serve immediately.
