Ingredients
  

Base Mix
  • 9 cups Rice Chex cereal
  • 1.5 cups white chocolate chips high quality
  • 0.25 cup unsalted butter
  • 1 tsp vanilla extract
Coating & Mix-ins
  • 1.5 cups powdered sugar plus more if needed
  • 1.5 cups dried cranberries Craisins

  • Large Mixing Bowl
  • Microwave-safe bowl
  • Gallon Ziploc Bag
  • Baking sheet

Method
 

  1. Measure Rice Chex cereal into a large bowl. Set aside.
  2. In a microwave-safe bowl, combine white chocolate chips and butter.
  3. Microwave in 30-second intervals, stirring after each, until completely smooth and melted.
  4. Stir vanilla extract into the melted chocolate mixture.
  5. Pour chocolate mixture over cereal and gently fold until evenly coated.
  6. Add powdered sugar to a large Ziploc bag.
  7. Transfer coated cereal to the bag, seal, and shake vigorously until coated in sugar.
  8. Spread mixture onto a baking sheet to cool. Sprinkle dried cranberries over top and mix gently.
  9. Store in an airtight container once fully cooled.

Notes

Add orange zest to the chocolate for a citrus twist.
