Ingredients
  

Truffle Base
  • 1.5 cups white chocolate chips high quality
  • 0.25 cup unsalted butter
  • 3 tbsp heavy cream
  • 1 tsp lemon extract
  • 1 tbsp lemon zest freshly grated
  • 3 drops yellow food coloring optional
Coating
  • 0.5 cup sanding sugar or granulated sugar

Equipment

  • Microwave-safe bowl
  • Baking sheet
  • Melon baller or teaspoon
  • Parchment paper

Method
 

  1. In a microwave-safe bowl, combine white chocolate chips, butter, and heavy cream.
  2. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
  3. Stir in lemon extract, lemon zest, and food coloring until combined.
  4. Cover mixture with plastic wrap touching the surface and refrigerate for 2 hours until firm.
  5. Scoop small portions and roll into 1-inch balls with your hands.
  6. Roll each ball immediately in the sugar to coat completely.
  7. Place on a parchment-lined tray and chill for 15 minutes before serving.

Notes

If the mixture is too soft to roll, return it to the fridge for another 15 minutes.
