Ingredients
  

Crust and Topping
  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 1 cup unsalted butter cold and cubed
  • 1 egg large
  • 1 tsp vanilla extract
Apple Filling
  • 4-5 medium apples peeled and diced (Granny Smith/Honeycrisp)
  • 0.5 cup brown sugar packed
  • 1 tbsp all-purpose flour
  • 1.5 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp vanilla extract

  • 9x13 inch baking pan
  • Mixing bowls
  • Pastry blender or forks

Method
 

  1. Preheat oven to 375°F (190°C). Line a 9x13 inch pan with parchment paper, leaving an overhang.
  2. In a large bowl, whisk together 3 cups flour, granulated sugar, baking powder, and salt.
  3. Cut in the cold, cubed butter using a pastry blender until the mixture resembles coarse crumbs.
  4. Lightly beat the egg and vanilla extract together, then toss into the crumb mixture until it holds together when squeezed.
  5. Press slightly more than half of the dough firmly into the bottom of the prepared pan. Set the rest aside.
  6. In another bowl, toss the diced apples with brown sugar, 1 tablespoon flour, cinnamon, nutmeg, lemon juice, and vanilla until coated.
  7. Spread the apple mixture evenly over the bottom crust.
  8. Sprinkle the reserved dough evenly over the apples, squeezing handfuls to create chunky streusel clumps.
  9. Bake for 40-45 minutes until the top is golden brown and the filling is bubbly.
  10. Cool completely in the pan on a wire rack before using the parchment sling to lift and cut into squares.

Notes

For a twist, add chopped pecans to the streusel topping or drizzle with salted caramel after baking.
